| Winemaking: |
Grapes picked at perfect ripeness before the acidity levels drop. The grapes are dried in small cases in a room with natural ventilation. Pressing without destemming, and fermentation in new and second wine barrels. At the end of fermentation a small amount of SO2 is added. The ageing period can last between 12-18 months depending on the concentration of the wine. When the barrels are blended the wine is lightly filtered to bottle with wine with the minimum SO2 required to avoid possible refermentations. |
