Winemaking is just the logical conclusion of our work in the vineyards, work which represents more than 85 person/days per hectare.
The grapes are aromatic, rich with the tastes of this hill.
We treat them as gently as possible to avoid losing any of the characteristics that nature's given them. Gentle pressing, cold precipitation, fermentation in barrels without malolactic (except in the case of the Chardonnay), care and strict attention to produce elegant and enjoyable (although often very rich) white wines in the classic mold.
The red grapes macerate with their skins in stainless steel tanks and spend long periods in oak barrels for our austere reds... the intense work in the vineyards is brought into the cellar: the land here is not kind to growers who aren't brave enough to make exreme choices. So much effort is repaid with red wines with a capacity for ageing unusual in other areas of Friuli.
If one can talk of philosophy in this life, Gnemiz's would definitely be:
I bend but I don't break, the land will be your friend if you treat it well and will give of its best. Here we're not great fans of fashions, rather we've worked for years to perfect our wines, maybe through mistakes or stubbornness... maybe we're a bit like our wines, austere but true.
